Easy Sweet Potato

I'm currently swimming in sweet potatoes (I got a bit excited doing my shopping and bought about 12 for the week). So yesterday I decided to roast them all. I thought I'd share my roasting method in case any of you haven't tried it yet...it involves close to zero effort and produces a beautiful result.

Once the potatoes are roasted, I love to split open the skin, add a nice chunk of organic butter and a sprinkle of sea salt and dive in...it's heaven. If there are any leftovers, I scoop out the flesh and freeze it in ziplock bags to add to future meals.

  • Sweet potatoes


  1. Preheat your oven to 200°C and line a baking tray with grease proof paper. 
  2. Place the sweet potatoes on the tray, then leave the tray in the preheated oven until the potatoes feel soft to touch. The time will vary depending on how many potatoes you are cooking and their size (it could be between 45 mins to an hour).
  3. Once the potatoes are soft to touch, remove them from the oven, allow to cool slightly and then peel the skins open to reveal your prize!

Makes as many potatoes as you desire (provided they all fit in your oven).
