No-Bake Chewy Muesli Bars

If you're in the mood for something a little bit sweet and a little bit chewy, these muesli bars do the trick! You don't have to bake them, just mix everything together, press into a tin and let them set in the fridge. 

I've been enjoying oats a bit more regularly in recent times. In the past, my digestion was in such a bad state that oats didn't make me feel great, but now I seem to tolerate them fine. They actually don't contain any gluten in their natural state, but since they're usually processed on the same equipment as wheat, they can contain traces of gluten. Luckily this doesn't bother me anymore, but you can buy gluten-free oats online if you're strictly gluten-free.

To the oats, I like to add crushed almonds and currants. I usually avoid adding dried fruit, but these are just so much nicer with a few currants in the mix. I also like to add some spices for extra flavour. Cinnamon and allspice work really well together or you could just do cinnamon by itself.

No-Bake Chewy Muesli Bars

  • 1 cup raw almonds
  • 2 cups rolled oats *
  • 1/2 cup currants
  • 1/2 teaspoon cinnamon powder
  • 1/4 teaspoon allspice
  • 1/4 teaspoon fine sea salt
  • 1/4 cup extra virgin coconut oil
  • 1/4 cup rice malt syrup (or honey)
  • 1 teaspoon pure vanilla extract


  1. Place the almonds into a plastic bag and bash with a mallet or heavy jar to crush them. You want there to still be some big chunks and some ground to a finer powder. Tip the crushed almonds into a large bowl and add the oats, currants, cinnamon, allspice and salt. Mix to combine.
  2. Melt the coconut oil and stir though the rice malt syrup and vanilla. Tip this mixture over the oat mixture and stir until everything is well combined.
  3. Line a loaf tin (I used a 22cm x 11cm loaf tin) with baking paper and then tip the muesli mixture into the tin. Press the mixture firmly into the tin using the back of a spoon or the flat base of a glass. Transfer to the freezer for 1 to 2 hours to set.
  4. Once set, remove from the freezer and cut into bars. Store the bars in an airtight container in the fridge.

Makes 12 bars.
