With only three ingredients, these Almond & Medjool Date Brownie Bites are an easy but decadent treat. Think sweet, caramel-like fresh Medjool dates, combined with crunchy almonds and dark chocolate ganache.
I developed the recipe for Natural Delights® using their Almond Medjool Date Rolls. They’re made with fresh Medjool dates, which are blended and then rolled in chopped almonds. Super handy to drop into recipes if you don’t want to get the blender out. They have a soft, brownie-like texture, hence the name of this recipe.
The Medjool Date Rolls are delicious to eat on their own, but this recipe pimps them out by adding a layer of dark chocolate ganache in between. Since the rolls are naturally sweet, I like to use at least 85% cocoa dark chocolate to make the ganache for an intense chocolate hit.
Almond & Medjool Date Brownie Bites
- 10 x Natural Delights® Almond Medjool Date Rolls
- 50g dark chocolate
- 50ml coconut cream
- Slice each Medjool Date Roll in half and squash with your fingers slightly to create little discs. Set aside.
- To make the chocolate ganache filling, finely chop the dark chocolate. This will help it melt quickly. Place the chopped chocolate and coconut cream together in a bowl and gently melt together in the microwave or using a double boiler. If using the microwave, heat it in 20 second intervals, stirring in between each interval to ensure the chocolate doesn’t burn.
- Allow the ganache to cool to a spreadable consistency. It will firm up as it cools. Spread the ganache over half of the Medjool Date Roll discs, then sandwich with the other halves.
- Store in the fridge.
